Menu 1
Creamy Wild Rice Soup
Ingredients
- 2TB of Butter
- 2TB of Olive Oil
- 1 Whole diced onion
- 4 Ribs of Celery, diced
- 4 Peeled Carrots, diced
- 6 Cups Chicken Broth
- 1 Whole Rotisserie chicken cut up and cubed
- 2 Boxes of Uncle Ben’s Long Grain Wild Rice
- 3 Cups of Half and Half
- 1/2 Cup of Flour
- Salt and Pepper to taste
Instructions
Just a few tips to make this extra easy. I buy carrots already shredded in the produce aisle. I also buy onions the same way. Then a rotisserie chicken makes this recipe SUPER easy. Honestly chopping a few veggies doesn’t take that long really!!

Poppy Seed Chicken
Ingredients
- Rotisserie chicken deboned and cubed
- 1 8oz container of sour cream
- 1 can cream of your choice soup
- 1/2 shredded Parmesan Cheese
- 1 Sleeve of Ritz Crackers
- 1 Stick of melted Butter
- 1 Tablespoon of poppy seeds
Instructions
Use a Rotisserie Chicken here as well. Saves you so much time and effort.

Wild Rice Casserole
Ingredients
- 1 box Uncle Ben’s Long Grain Wild Rice
- 1/4 cup butter
- 1/3 cup flour
- 1Ts salt
- 1Ts pepper
- 1 cup Half and Half
- 1 cup Chicken broth
- 2 cups diced rotisserie chicken
- 1/3 cup slivered almonds
- 1/2 cup Panko breadcrumbs
Instructions
Use a Rotisserie Chicken this time too. It saves so much time!
- In a Large pot melt butter and olive oil together. Put all your veggies in the pot and cook until onions are clear and other things soft. Salt and pepper here.
- Pour chicken broth and cubed chicken in pot. Bring to a soft boil.
- Add Rice and seasoning packets that come with the rice to pot. Simmer 20 mins till rice is done.
- In a skillet put a slight amount of oil, add flour to make a roux. Once the flour is hot add 1/2 cup half and half. Heat up and then pour into your pot. To the pot add the rest of your half and half cream.
- Preheat oven to 350 degrees
- In a very large bowl mix the sour cream, chicken,cream soup, and poppy seeds together. Mix well
- Pour into a greased 2 QT casserole dish. Spread out.
- Put your crushed Ritz crackers into the melted butter. Mix well.
- Sprinkled evenly the buttered crackers on the top of chicken mixture.
- Bake for 30 minutes until bubbly.
- Preheat oven to 425 degrees
- Cook rice and contents of seasoning packet according to package directions.
- While rice is cooking, melt butter in large saucepan. Add onion and cook over low heat and until tender.
- Stir in flour, salt and pepper.
- Gradually stir in half and half and broth. Cook stirring constantly, until thickens.
- Stir in chicken, almonds and cooked rice.
- Pour into a greased 2 quart casserole dish.
- Top with panko breadcrumbs.
- Bake 30minutes.
I just want to say how delicious the Creamy Wild Rice Soup is. I like all of the recipes but I could eat this everyday. It is delightful with warm bread.
